Byadgi Chilis are an extremely popular chili with a flavor that is fruity and earthy. It is exclusively grown in India. This chili is vibrantly red and maintains its color through cooking. It is great for making it into a chili powder or used in chili, stews, sauces, and stir-fries.
Byadgi chilies are tapered and very wrinkly in appearance, especially when dried. The Byadgi Chile has a heat range of 15,000 to 25,000 SHU, not overwhelmingly hot. Annual production of Byadgi Chiles is roughly 46,000 pounds, much of which is consumed in India, and some exported out to other countries. Byadgi chili can be used to give both flavor and color to a dish. In Indian cuisine, it is often ground up and used in masalas as well as used whole in making curries, biryanis, sambhar, etc.
