Cloves are originally native to the Moluccas, a chain of volcanic islands near Indonesia. While Asian, African, and Middle Eastern countries tend to lean toward its use in savory foods, in Europe and the Americas it’s often used in breads and sweets. Throughout Asia they are popular in curries. Whole cloves also have a strong reputation for use in pickling and mulling. Cloves are a key ingredient in Chinese Five Spice, Garam Masala, Pumpkin Pie Spice and Quatre Epices. In Mexican cuisine, cloves are frequently paired with cinnamon and cumin. Cloves pairs well with cinnamon, allspice, vanilla, onion, citrus peel, star anise, basil, or peppercorns. Use sparingly because their strong flavor can overtake a dish’s flavor.
