Although not highly popular in Western world, Fenugreek also known as Methi, is a highly sought after spice in Indian and Middle Eastern cooking. It is most popularly used in blends such as curry powder, fish curries, Indian pickles.
Fenugreek comes in three forms: seeds, ground and leaves. All three most popularly in used in Indian cooking. Fenugreek seeds are caramel-colored, and hard in texture. They can be ground to release more flavor. When the seeds are toasted they begin to smell and taste like maple syrup. This has led fenugreek to become used in sweet breads and as a source of artificial maple flavoring. Fenugreek can be used in fish curries, with root or green vegetables, lamb, legumes, potatoes, rice and tomatoes. It also makes it a great pickling spice.
