Cloves are originally native to the Moluccas, a chain of volcanic islands near Indonesia. However, they’re harvested primarily in Indonesia, India, Madagascar, Zanzibar, Pakistan, Sri Lanka and Tanzania. While Asian, African, and Middle Eastern countries tend to lean toward its use in savory foods, in Europe and the Americas it’s often used in breads and sweets. Cloves pairs well with cinnamon, allspice, vanilla, onion, citrus peel, star anise, basil, or peppercorns. Use sparingly because their strong flavor can overtake a dish’s flavor.
Cloves have a history in medicinal use as well. Their essential oils can aid in digestion while also help relax muscles in the body. Whole cloves are sometimes used as a oral painkiller to treat mild toothaches.
